Steve's sugar-free blog: Going all gooey

Having been on nights this week, I have found it really hard to take the time and cook from Davina's book, but I did manage to create a couple of quick and fantastic recipes to help keep me going when at work.

My recommendations this week are the chocolate brownies (p.174) and the flapjacks (p.178). Both are totally yummy and you will honestly not want to share these, so get back and stay away from the plate...Grrrrrr!

The Gooey Chocolate Brownies:

To be honest, I have never been a fan of chocolate brownies. Perhaps I have never tasted a good one but decided to give Davina’s recipe a go; a last chance saloon for the chocolate brownie!

The recipe was again really easy to follow, though at one point I was concerned that it had gone all lumpy. But with a little patience and stirring this sorted itself out, and eventually it did look all smooth and shin, so into the oven it went. 

After I had left them to cool I was absolutely delighted with the way they came out, and they were delicious. Davina’s brownies will now be added to my cooking repertoire!

They were thinner than in the book only because I didn't have the right size pan - but this is a positive as it means the batch will last longer and I get more!

Oaty flapjacks:

As I was on a roll and working this weekend, I wanted something to keep me going during the day. I decided to go with the flapjacks as the recipe was clear, only had a few ingredients, and not too time consuming, so off I went and started my creation.

I love the idea of chucking everything in a pan and just mixing. I do have a word of advice, and that is: when you pick your pan out, go for the next size up because when you add the oats and coconut the pan soon fills up. I will say no more on this point! I transferred to a mixing bowl so I was 100% sure that all the oats got coated in the honey and bits of date.

The flapjacks came out that lovely golden brown colour you always want. Left to cool on my rack I waited, mouth drooling, ready for that first taste, and when that moment came it was worth the wait. The flapjacks are another great recipe in Davina’s book...
