Sherri's blog: 'It's Week Four and I cannot believe I've achieved this'

It’s Week Four out of my Five Weeks to Sugar-Free challenge and I’m really happy. I've lost nine and a half pounds which is unbelievable, and has really helped my back problem which is a HUGE bonus. I cannot believe I've achieved this simply from not filling my face full of rubbish, and I’m sure that abstaining from alcohol has most definitely helped… And all this without any exercise whatsoever – I can’t wait to start getting fit again!

This week we've had a few issues so I took some time off work and we found ourselves having to eat a couple of meals late at night – on those days we kept dinners light. I finally made the digestive biscuits (p. 177) and they were well worth the four week wait! A simple fool-proof recipe and to be noted (given my taste buds have changed) that I only had one, and didn't find myself reaching for another.

Our meal of the week was the Chicken & Roast Vegetable Traybake (p.116), one of the tastiest meals I've ever eaten. I've never used Herbes de Provence before and absolutely love the flavours – especially mixed with sweet smoked paprika. I substituted the aubergine for courgettes and also added a green pepper (to avoid throwing it away). Easy and quick to prepare and the leftovers the next day were delicious!

We also allowed ourselves a treat after Sunday dinner and opted for the baked apple (p. 194). I was surprised at how easy it was to prep – coring the apples, filling them with raisins and the teeniest bit of maple syrup (optional of course) with cinnamon. They didn’t take long at all. I served them with a drizzle of double cream and Grahame was a very happy husband. He’s lost 13 pounds - he isn’t doing the full challenge with me but is eating the same meals. I’ve totally valued his support and we’re both feeling much better as a result.

At work it’s been ‘Wellness Week’ and I got to spend some time with a Nutritionist – I’m extremely pleased to say that she thought my food intake was absolutely spot on – a good mix of all food groups and very healthy indeed. I came out of the session feeling like I’d passed an exam!

I’m looking forward to another week of trying more new meals from Davina’s book and I can’t believe next week will be my final blog – sometimes it’s felt like ages but now it’s just flying by! I’m really keen to continue trying out lots of new recipes and different foods. 

The countdown to week five begins, but is it actually the end for me? Watch this space…
